Ultimate Comfort Meal

Living alone means having to cook for yourself.  After a long day of working with loud adolescent students all I want to do is fall on my bed and have food brought to me by a gorgeous man who will then massage my weary feet.  Unfortunately, I’m not that privileged!  My go-to-quick-and-easy-comfort-meal is Mac and Cheese.  My mom taught to make meals from scratch so ready made box meals don’t make the grade in my home. And so I clock in some kitchen time…I guess it’s good practice for when I eventually settle down and have to feed my husband.

Anyway…Here’s my rendition of Mac and cheese

Ingredients 

The most obvious, macaroni.

For the cheese sauce, you will need

1 1/4 cup low fat milk

5 teaspoons flour

1/2 teaspoon salt

1 cup grated cheese

Method

I’m assuming everyone knows this but I’ll say it anyway. Bring a pot of water to a boil, then throw in your macaroni.  Add a tablespoon of oil and a spoon of salt to the water.

For the sauce

Bring 1 cup of low fat milk to a boil in a small saucepan over medium heat (stir continuously to avoid sticking).  In a bowl, mix the 5 teaspoons of flour in the1/4 cup of milk (it should form a nice paste).  Add the paste to the boiling milk and whisk with all your strength as this will cause the milk to thicken.  When it’s thick and big bubbles begin to form add your salt and some black pepper to enhance the taste.  Give it a few more good whisks then turn off the heat and throw in your cheese; watch it melt as you mix it in.

Once your sauce is ready and your macaroni has been boiled and strained combine the two and enjoy a plate of the ultimate comfort meal.

Variation

Sometimes, when I’m playing host to my vegetarian friend I tend to get a little creative.  My friend, Lauren, loves my mac and cheese but just throwing that on a plate is boring. So, to be fancy, I place my saucy macaroni into a muffin tin and bake my little “muffins” for 15 minutes.  After removing them from the oven, I set them aside to cool before removing them from the pan.  It’s a great accompaniment to a good salad or stir fried vegetables.
